Dumplings with chicken filling on sparkling water

Ingredients:

  • Wheat flour – 500 g
  • Sparkling water – 200 ml
  • Egg – 1 pcs
  • Salt – 1 tsp
  • Vegetable oil – 1 tbsp
  • Chicken mince – 400 g
  • Salt, pepper – to taste
  • Water or chicken broth – 1–2 tbsp

Instructions:

  1. Mix flour with salt, add one egg, 1 tbsp of oil and sparkling water. Knead soft, elastic dough. Cover with a cloth and let rest for 20–30 minutes.
  2. Season chicken mince with salt and pepper, add a little water or broth for juiciness. Mix well.
  3. Roll out dough thinly. Cut circles with a glass or cup. Place filling in the center of each, cover with the other edge and pinch the edges together.
  4. Bring water with salt to a boil. Add dumplings in batches. Cook 5–7 minutes after they float.
  5. Serve hot with sour cream, butter or your favorite sauce.

🍩 Lifehack: the longer the dough rests, the more tender and easier to roll it becomes. For extra juicy filling, add 1 tbsp sour cream or oil. Add a little oil to the water — dumplings won’t stick or overcook. After boiling, you can lightly fry dumplings in a pan — crispy outside, tender inside.
