Turkish Dolma (Stuffed Grape Leaves) — Authentic Homemade Recipe

Authentic Turkish dolma is an incredibly flavorful, juicy, and exquisite dish that wins everyone over from the very first bite. Tender grape leaves stuffed with a savory mixture of minced meat, rice, herbs, and spices are simmered to perfection. This traditional recipe will guide you through creating a true Eastern culinary masterpiece right in your own kitchen.

Ingredients:

  • Grape leaves (fresh or pickled) – 40-50 pcs
  • Ground meat (beef or lamb blend) – 500 g
  • Rice (short-grain) – 100 g
  • Onions – 2 pcs
  • Fresh herbs (parsley, dill, mint) – 1 bunch
  • Olive oil – 4 tbsp
  • Lemon juice – 3 tbsp
  • Salt, black pepper, cumin – to taste
  • Water or broth – 400 ml

Instructions:

  1. If using fresh leaves, blanch them in boiling water for 3-5 minutes. If using pickled ones, rinse them well under cold water.
  2. Finely chop the onions and sauté in olive oil until soft, then combine with the rinsed rice.
  3. In a large bowl, mix the ground meat with the rice and onions, chopped herbs, salt, pepper, and cumin. Mix thoroughly.
  4. Place a grape leaf shiny side down on a flat surface. Put a small amount of the meat filling near the stem base.
  5. Fold the sides of the leaf inwards and roll it up tightly into a neat log shape.
  6. Line the bottom of a heavy-bottomed pot with a few torn leaves, then pack the dolmas tightly in layers.
  7. Pour hot water or broth over the dolmas until they are just submerged. Add lemon juice and olive oil.
  8. Place a heavy inverted plate on top of the dolmas to keep them from unrolling while cooking.
  9. Cover the pot with a lid, bring to a boil, then reduce the heat to low and simmer for 45-50 minutes until the rice is tender.
  10. Remove from heat and let it rest covered for about 10-15 minutes before serving.
